Cheesy Mashed Potatoes (from Pat)

6 large potatoes
1 8 oz pkg cream cheese
2 tsp salt
1/2 tsp pepper
1 cup shredded cheese
1/2 cup sour cream
1/3 cup finely chopped onion
1 egg

Cook potatoes. In a mixing bowl add all ingredients and beat well. Transfer to a 2 qt baking dish. Cover and bake at 350 for 40-45 minutes until heated through. May make the night before and refridgerate until ready to cook.

We love these potatoes. I love that you can make them the night before. My mom always asks me to make these when she's hosting lunches or dinner parties. Everyone always asks her for this recipe.

    1- I'm assuming this can be frozen too, right? Like for a freezer meal? Have you tried that?
    2- I'm super lame w/ measurements. Is a 2 qt. dish the casserole size or the square brownie size?
    I'm going to try this next week!!!

  2. Ha Ha!! I guess 2 qt dish is if you have cute casserole dishes or something. I do not!! I cook them in a 9x13 inch pan.
    I have tried to freeze them. It didn't go so well. I put them in a little throw away casserole tin. I pulled them out of the freezer and let them thaw and when I went to cook them there was a ton of water on top. I have thought about freezing them in an airtight baggie to see if that helps.

  3. Oh gosh, THANKS!!!!!! I was about to make some for someone's freezer!!!! I'll probably send some frozen twice baked potatoes then and keep THESE (fresh) for me!!!! ;)

  4. These are absolutely delicious!!!!!!!!!!!!! I also made these yesterday for Easter for the first time and fell in love. I think this is my new favorite potatoes recipe! I had some leftovers from yesterday and we're having them for dinner tonight again with ribs. Thanks for the recipe, Pat and Jodi for posting it!!!! <3
